potatoes & green beans

This is a very simple but delicious recipe that everyone in the family enjoys.  OLYMPUS DIGITAL CAMERA

What you will need:

few red skin cleaned potatoes, a bunch of fresh green beans, cleaned and tips cut off (optional), fresh garlic and extra virgin olive oil. or use water

As far as how many potatoes, green beans etc. it depends on how many people you are preparing for.  You cannot go wrong with extra!  This dish tastes great the next day.  I often bring  the left-overs to work the next day for lunch.

Directions: 

Cut potatoes in small pieces and boil until somewhat soft.  Be careful not to cook to long to prevent breakage of  the potatoes into small pieces while sauteing.  In a wok or large sauteing pan, add a small amount of olive oil or if prefer saute in water,  adding more water as needed, add the  fresh minced garlic and saute’ lightly, then add in potatoes, eventually add the green beans, and season with pepper and garlic powder to taste.  Serve hot!
